The World’s Most Delicious, Gluten-Free Raw Vegan Dessert

Easy Raw Vegan Gluten-Free Brownie Recipe

I am now convinced that my explorations into healthy, easy, and appetizing foods is a never-ending journey. Lucky that I also live with a budding chef! During my raw-vegan challenge, which coincided with my hubby’s particularly creative phase around “sweets”, something wonderful happened in the kitchen, and too wonderful not to share.

He called it a raw vegan gluten-free brownie. I called it “crack” for fun! You can call it what you like. But first, here is exactly how you make it! This dessert is a favorite by so many people, and certainly it is a dessert to be enjoyed by raw foodists, vegans and non-vegans alike!

You guys: I really do not mean to look that serious when grinding the almonds. Laughably silly!

Raw Vegan Dessert – Brownie – Recipe:

Get Your Ingredients:
1.5 cups raw almonds
~15 dried figs
1/2 cup raw cacao powder
1/3 cup shredded coconut
1/8 cup water

Hurry and Make It Already:
1. Blend the almonds in a food processor for about 30 seconds until you have a fine consistency.
2. Add the figs and cacao powder to the food processor; blend for another 30 seconds.
3. Add the coconut powder and pulse 5 times.
4. Add the water and pulse 5 times or until the mixture begins to solidify.
5. Spread the mixture onto one half of a small baking tray lined with parchment paper; fold the parchment paper over the mixture and mold the mixture into a block approximately 1″ thick.
6. Place the baking tray into the refrigerator for at least 30 minutes.
7. Remove the tray from the refrigerator and cut the block into bite-sized pieces.

You made it look so easy, and you put the video together very well.

It does look good, and I can taste it with my eyes.

I’m always amazed by what the right ingredients can morph into. That’s so true in so many things in life.

Hi Jane, yes, something similar at our Whole Foods too but this one is a lot sweeter, the one I had there had a bit of bitterness from the raw cacao, but you can’t taste that in this. It’s the perfect level of sweetness. Let me know how it turns out!

I’m not too fond of figs, but I would like to try out this recipe. Do you think I could replace the figs with other dried fruits, like dried apricots, or just leave out the figs?

Eva, how funny you say that. Last night, we made the exact same recipe but we replaced figs with dates – do you like dates? – and we replaces almonds with walnuts. It tastes just as delicious and very similar. I am not fond of dried apricots actually ;) they tend to give me a belly ache, but I would say dates, from their sweet nature and their consistency, worked really well. Good luck!!!

Eva, the dates work beautifully, as Farnoosh wrote here. If you were going to use dried apricots in this, you might still want to use dates as the main sweetener and the apricots as an added extra. That could work well.

Ah excellent to know, although I am still wary of apricots. Blame my childhood when I had a bowl of dried apricots and nursed a stomach ache for a week ;) !

Looks very delicious, Farnoosh. And you know what – the process sounds somewhat similar to a North Indian dessert that we call ‘Katli’. Except, we use cashew nuts instead of almonds and we don’t use Cacao.
About your videos – I admire how much you put into each post, Farnoosh – making them worth it with not just your writings but with other media like podcast, video etc.
My misfortune is that I am never able to see these videos without they breaking every second. The bandwidth here is bad. It does not allow watching the videos in a seamless manner. Forget seamless – a break every second leaves you frustrated…

Having said that – just watching you for a few seconds in flesh and blood reinforces the connection we share. :)

Dear Rashmie, I just had some of this dessert with tea and writing you with the aftertaste still in my mouth. I know already that my husband would *LOVE* the recipe for that Katli. It sounds delicious.
I am so sad to hear you couldn’t watch this. What if you let it load first and then watch it… so press start, then stop, and let the other grey bar go all the way to the right and then watch? Hi dear Janet, so you saw the end result that I cut up. We cut it up into a large bite-size piece and there was easily 30-35 pieces. I didn’t count but an educated guess. If you have 2-3 (at least ;) ) per serving, that’s 10 servings. We have kept it in the fridge without any issues for up to 5 days but they usually last no more than 4 day! :)

Hi Farnoosh,
These look great!
I like to make something very similar, but using dates rather than figs (I’ve never really tried figs, to be honest) and walnuts as opposed to almonds – mostly because that’s what I tend to have in the pantry.
I’m trying to get back to healthy rather than unhealthy snacks, and eating a whole lot more raw foods again, because I have so much more energy and am much happier when I do.
I’ll have a go with the almonds definitely, and will look out for figs to try next time I’m buying fruit. If I’m going to sustain a more healthy way of eating, having some variety in the snacks I create will be a great help!
I’d definitely encourage your readers to have a go at creating this dessert. Honestly eating ‘raw’ foods may not sound appealing to everyone, but is something that I think you can’t truly appreciate until you try it for yourself!

Dearest Brigid, would you believe it if I told you earlier this week, my hubby made the EXACT version of the dessert that you say above, as experimentation and I am eating it now as I write you this, along with having my Oolong tea. YUM! I like both versions, and they are delicious. I am no longer even vegan but I am a health nut nonetheless, and I love eating this but this dessert will appeal to a lot of tastes and go across many diets. No doubt about it. Keep up your health aspirations and be kind but firm with yourself. And of course, have some yummy raw dessert when you can. Thanks for making me smile tonight and please share this with anyone else that may find it useful.

I just replied above in your comment thread to Eva, as you were writing this I suspect.
Between writing those two comments, I’ve been up to the supermarket and got a great big bag of ‘natural’ almonds – if they’re not totally raw, I’m at least pretending they are for now because they’re the closest to it I’ll get without driving for an hour! So I’m stocked up to make this for my afternoon snack.
I’m not vegan either, or even vegetarian, but just love the experiences I’ve had of raw food, so I’m a ‘wannabe’ really!! The more inspiration I can find, the better, so reading your experiences and recipes is a great help!
